Ingredients
· 1/2 cup grapefruit juice
· 2 large salmon steaks or fillets of salmon
· 1/2 cup grapefruit, coarsely chopped
· 1/2 cup grapefruit juice, with pulp
· 1/4 cup liquid honey
· 1 small red onion, coarsely chopped
· 1/2 teaspoon sea salt
· 1/2 teaspoon white pepper
Directions
· In a medium bowl, combine grapefruit juice and salmon. Marinate, covered or sealed in the refrigerator, for 4 to 6 hours, or overnight.
· Meanwhile, in an Oster® food processor, combine chopped grapefruit and juice with pulp, honey, balsamic vinegar, onion, salt and pepper. Process until sauce is chunky.
· When salmon is ready, remove from marinade and transfer to an Oster® food steamer. Add sauce and steam for 15 to 18 minutes or until salmon is pink.
· Place salsa over top of salmon and serve.
Additional Notes
· The tartness of this recipe is tempered by the honey and balsamic vinegar.
