Ingredients
· 1/2 cup olive oil
· 3 cloves garlic, chopped
· 1/2 cup orange juice, freshly squeezed
· 1/2 sweet red pepper, finely chopped
· 1 tablespoon lemon juice, freshly squeezed
· 2 tablespoons balsamic vinegar
· 1 teaspoon fresh or dried basil
· 1 pound jumbo shrimp, shelled
· 1 tablespoon grated orange zest
· 1 teaspoon hot sauce
Directions
· In an Oster® blender or food processor, combine oil, garlic, orange juice, pepper, lemon juice, balsamic vinegar, hot sauce and basil. Set to pulse and/or chop until well mixed.
· Transfer mixture to a large bowl and add shrimp. Marinate the shrimp, covered or sealed, overnight or for at least 6 to 8 hours, in the refrigerator.
· When ready to bake, remove shrimp from marinade and place on Oster® toaster oven pan. Bake at 450ºF (230ºC) for approximately 5 minutes. Add the orange zest and broil for 2 minutes more.
· Serve skewered on a pilaf, or mixed in with pasta.
